In this case, tongue means satisfied taste with customer. Eventually bartender understands customer's taste that it means equal to reading tongue. It is an indispensable thing to pursuit to excellent cocktail. Even if it really prepares wonderful cocktail, it has not meaning that the main customers do not pleasure the cocktail. If bartender is knowing that the customer feel to tasty with a high alcohol content, as doing as shaking for customer, and if the customer favorite sweet in taste, dry in taste does not impressed by customer. As like this, an advantage of cocktail is arranged according to each satisfaction of taste with customer.
The late famous bartender Mr. Kiyoshi Imai who called Mr. Martini in Japan said that a cocktail has as followings four type of recipes.
1.Standard recipe 2.A recipe has a sense with the change of time 3.A recipe has originality by cocktail creator 4.A recipe with satisfied taste by customer
As above mentioned the type of recipes, cocktail can arrange some from original. The excellent bartender could work to arrange for satisfied taste of cocktail with customers. However, it has a maximum permissible limit to four types of recipes. The arrangement should not so remove from original. For example of Sidecar, it should be jointed together sweet and sour taste to original spirits, as same as recipe. I some time see the recipe as almost brandy, but it is not Sidecar. The cocktail would be another cocktail for enjoining taste to only brandy.
Reading tongue means that the arrangement in a maximum permissible limit would be adapted to satisfied taste of cocktail with customers.
